Hot Dogs with Beer-Braised Sauerkraut

Take your regular off the shelf hot dog and make them something truly awesome by infusing them with a subtle zesty kick from simmering them in beer, onions, and chiles and topping with beer-infused sauerkraut.  I have to admit, I’m not normally a big sauerkraut fan, but this recipe really changed my mind  Give it a try!  My buds at the firehouse really love it.


8 hot dogs

8 ounce(s) beer

1 onion, thinly sliced

4 jalapeños (optional), very thinly sliced

3 cups sauerkraut

3 tablespoon(s) mustard

8 hot dog buns

1/4 cup diced green onions


  1. In a medium pot, bring hot dogs, beer, onions, and jalapeños (if using) to a simmer. Let simmer uncovered for about 5 minutes.
  2. Add sauerkraut and cover. Cook another 4 to 4 minutes. Mix in mustard just prior to removing from heat.
  3. While hot dogs are simmering in beer and sauerkraut, lightly toast the buns for a few minutes in the oven or toaster.
  4. Put hot dogs in buns and top with sauerkraut.Top with diced green onions.
  5. Serve immediately.
