Hot Dogs with Pickle and Parsley Relish
This recipe was inspired by a trip I took to visit Tad, a college friend who lived in Ohio. His mother made the most delicious pickle relish that tasted garden fresh. She served hamburgers and hot dogs that day with the relish on the side, but everyone topped their burgers and dogs with the relish. This recipe is in honor of Tad’s mom.
6 dill pickles, coarsely chopped
2 tablespoons of dill pickle juice
1/2 medium white onion, finely chopped
3 tablespoon(s) Grey Poupon mustard
1/4 cup(s) chopped fresh flat-leaf parsley
12 hot dogs
12 hot dog buns
Mustard, for serving
Heat grill to medium-high. In a medium bowl, gently toss together the pickles, pickle juice, onion, and mustard. Fold in the parsley. Taste and add salt if necessary. Let sit for 15-20 minutes to allow the flavors to meld and the pickle juice to mellow the bite of the onions.
Grill the hot dogs, turning often, until slightly charred and heated through, 4 to 5 minutes. If desired, grill the buns until lightly toasted.
Serve the hot dogs on the buns with the relish, mustard, and ketchup, if desired.
To spice things up and add some zing to the pickle relish, add 2 tablespoons chopped jalapeno peppers and mix into the relish.
