Kimchi Hot Dog Relish

Kimchi is a delightfully tangy, sour, salty, spicy concoction from Korea made of cabbage, onions, carrots, garlic and a dozen other ingredients, and best of all, it’s remarkably good on hot dogs. If you like spicy condiments on your dog be sure to give this recipe a try.
INGREDIENTS
1 cup chopped kimchi (try to find it at your local Korean grocery store if possible, it’s much better than the grocery store variety)
5 tablespoons extra-virgin olive oil
1/4 cup fresh lime juice
3 tablespoons chopped fresh chives
2 tablespoons reduced-sodium soy sauce
1 tablespoon toasted sesame oil
1 tablespoon honey
1 tablespoon Sriracha (optional)
Salt and freshly ground black pepper (to taste)
DIRECTIONS
In a medium, non-reactive bowl, combine the kimichi, olive oil, lime juice, chopped chives, soy sauce, sesame oil and honey. Mix thoroughly and taste. Kimchi can be pretty spicy, so taste it and add the Sriracha if you like more heat. Season with salt and pepper to taste. Cover and chill in the refrigerator for at least 20 minutes so the flavors can meld. Keeps for up to a week in the frig, so make a batch and enjoy it all week.

Hey, thanks. I love kimchi so I gave this a try and it was remarkable how the addition of the few extra ingredients really mellowed out the funkiness of the kimchi while adding a layer of complexity to the flavor.
