Smoked Bacon & Onion Hot Dog Topping

Bacon and onions, need I say more?  This topping makes any hot dog taste like a Haute dog.


6 strips hardwood smoked bacon

1 tablespoon dry mustard

1/2 cup apple cider vinegar

4 large yellow onions, coarsely chopped

1/2 cup light brown sugar


Preheat oven to 350 degrees. Lay the bacon onto a baking sheet lined with parchment paper and cook for 20 to 25 minutes, until each strip is evenly crispy. Remove and chop the bacon into small pieces. Set aside.

Add the onions to the baking sheet and put them back in the oven to roast for about 10 minutes, then mix the the vinegar and remaining ingredients (including the bacon) together and to baking sheet.  Cook for 10 more minutes or until most of the liquid is reduced and the onions are dark in color. This yummy topping will last for 2 weeks in the refrigerator and up to 3 months in the freezer.
