Nothing says Wisconsin in the summer time like delicious beer and cheese hot dogs…. Here’s a recipe inspired by a meal we had at a small road side hot dog stand in Door County during our last vacation.
>1/2 cup beer (of your choice)
1/4 cup Dijon mustard
3 tablespoons butter or margarine
1/8 teaspoon (a pinch) red pepper
1/8 teaspoon (a pinch) ground black pepper
1/4 teaspoon salt
12 slices American cheese, cut into quarters (or a similar quantity of Valeeta cheese)6 (1/4-pound) hot dogs
6 homemade pretzel buns, sliced horizontally halfway through
2 cups store bought popcorn (optional)
Heat gas grill to medium or charcoal grill until coals are ash white.Combine beer, mustard, butter, red pepper, salt and ground black pepper in 1-quart saucepan. Cook over medium heat, stirring with whisk, until mixture comes to a boil. Reduce heat to low and add cheese. Continue stirring until cheese is melted and smooth. Cheese sauce should be thick and creamy. Keep warm.
Place hot dogs on grill. Grill, turning occasionally, cook for 5-8 minutes or until heated through and grill marks show.
Place hot dogs into pretzel buns; top each with 2 tablespoons cheese sauce.Sprinkle with popcorn for added texture, if desired. Serve with remaining cheese sauce for dipping.
